How did your week go? I am struggling to remember what happened at our house last week. I know what didn’t happen. We were supposed to go home to my family and have Christmas. But, that didn’t happen. I won’t travel anymore if there is even the remotest possibility of snow in the forecast.
I just realized that I’ve never talked about that weekend on here. Let me see if I can actually tell a short story: We went home to my parents. It started to snow. We left and started towards our tiny town. Snow escalates into a blizzard and the interstate shuts down. We are stranded half-way home.
That’s the gist of it. There were lots more scary and crazy things happening like – not being able to see three feet in front of the truck for three hours straight. Sliding down the interstate and not knowing if we would actually be able to stop or start going again.
Not fun. So anywho, we don’t travel anymore when they call for snow! Instead I worked on getting the remainder of our living room ready for hardwood floors. I can’t wait. I should be able to finish this portion of the project off tonight. Woohoo!
Anyway……here are some of the things we ate last week in no particular order:
Chicken salad, yum. I crave this stuff sometimes, don’t you? If you don’t, maybe you should try my recipe…..
Chili and grits. This was a request from Denton. I didn’t have any red kidney beans (HOW?!?) so I substituted drained black beans that I rinsed well. It turned out delicious.
Italian takeout. This was a request from Hayden. He came into the kitchen earlier in the week and stopped dead and said “I thought I smelled the bread from insert your families favorite Italian restaurant here.” Our favorite Italian restaurant is owned by our favorite Italian friend. It’s also named after his family, so I won’t be telling you what it is – at least until we move away from our tiny town. Anywho, Hayden looked crushed, so this weekend we ordered all of the yummy things Italian. Like homemade bread and marinara.
Soup beans, roasted veggies, cornbread and salmon. What would my week look like if I couldn’t have my comfort food at least once? Sad, that’s what.
