What’s for Supper? Weekly Meal Plan 02.18.19

Hello again!  How was your week?  Ours has become routine again and I can’t say that I’m mad about it.  Routine is my peaceful place.  It’s nice to get out of that space occasionally, but it’s where I’m happiest.

Is it Spring where you live yet?  If it is, can I come and visit you?  I keep getting seed catalogs in the mail and it’s making me antsy.  I learned how NOT to kill tomatoes and peppers over the past few years, so I am getting braver and want to try other things.  Lord help them, but want to try.

Things like cucumbers, and zucchini’s; green beans and rosemary.  Yes, I know those are not exotic, reach for the stars things, but I’m looking for foods that I know my family loves and maybe, just maybe I can actually grow and not overextend myself.  And that hopefully I can keep alive and well.  Anywho, let’s get to the food!

Here’s what we ate last week in no particular order:

  • Leftover pizza with a GIANT salad.  Leftovers can be a brand new meal if you present it differently.  I made the main component of our meal the giant salad with pizza on the side and it was even better than it was the first night.

  • Soup beans, roasted veggies, mac and cheese and my beloved salmon.

Salmon Bombs

  • Taco Pie.  This stuff is amazing.  You have to try it!

  • Having another leftover day always makes me happy.  Especially when it’s ham biscuits from the spiral ham I just baked the day before and Denton’s Aunt Gail’s guava jelly.  Yum.
