Pulled Chicken Recipe


Today I’m sharing another “recipe” that I hesitate to call a recipe.  It’s so simple and easy, but at the same time, delicious and tasty.  I call it pulled chicken and you can use it for many, many things.  Our favorite way to eat it is on buns.  But, you can also put it in taco shells, tortilla shells, over rice, whatever your heart desires.

Here’s how I make it:  Start with raw chicken.  It can be chicken breasts, chicken thighs or even a whole chicken.  This time I used three boneless chicken breasts that I pulled from the freezer and they were still partly frozen when I put them into my slow cooker.

Pour over your favorite barbecue sauce….

Cook on low for four to six hours or high for two to four.  It actually depends on how much chicken you put in your crockpot.  Here I used three boneless chicken breasts and I cooked them on high for two hours and they were perfect.

Like this.  Yum!  Next I drain off all of the liquid.  You can leave part of it in with your chicken if you want, but my people like it with a dryer consistency.  Do what you want with your chicken!

Shred it up.  An easy peasy way to do this is to use a hand mixer or a stand mixer to do your shredding for you….

Pour in more BBQ sauce…..

Our all time favorite – Sweet Baby Ray’s Sweet ‘n Spicy.Then serve it up however you want it.  Tonight it was on buns for us.

Prep Time 5 minutes
Cook Time 2 hours

Ingredients
  

  • 1 pound raw chicken
  • 1 cup barbeque sauce (or as much as you want)

Instructions
 

  • Place the raw chicken in the slow cooker
  • Pour over sauce
  • Cook on high for two hours
  • Pour off excess liquid
  • Shred the chicken
  • Cover chicken with more BBQ sauce
  • Add to buns, rice, or whatever your heart desires and enjoy!

What’s for Supper?

What’s for supper at your house this week?

Sometimes I feel like i just can’t get my sh*t together.  Do you ever feel this way?  I make a plan, I even write the stupid plan down and hello.  Life happens.  I have found that the key is to keep on traipsing along and things will even out.  I think part of my problem is due to my control freak nature.  I make the plans, things happen and then I want to put the entire plan into a dumpster and set it on fire because things aren’t going my way.  Sounds sort of like a two year old, doesn’t it?  Hahaha.

Also, how vague can a person be?  Anywho, I know you are here to get ideas for your own supper, so lets see what I managed to write down!

Sunday: 

Potato soup, bacon, biscuits.  I have started to make my own biscuits again.  This time they are turning out divine.  I’ll give you my secret soon.

Monday:

Taco Pie.  I just crave this sometimes, don’t you?

Tuesday: 

Soup beans, salmon, mac and cheese, fried mushrooms.  Just writing all of that out makes me want to fix this for supper tonight.  Yummy.

Wednesday: 

Hamburgers.  Easy peasy.  Everyone loves a great burger.

Thursday: 

Tuna sandwiches.  Always a top choice when I don’t want to cook.  Yum.

Friday: 

Spaghetti and Alfredo with garlic toast.  It was garlic toast this time because I had a loaf of Natures Own Crafted bread from mine and Liv’s last trip into the city.  Use what you have people.  If you only have regular white bread on your counter, slather that with butter and garlic and toast it in the oven.  Anything to keep me out of the store!

Saturday: 

Leftovers.  Yay!

Taco Pie

Taco pie.  Yum.  When you want a taco, but something slightly different, this is the recipe that you want to try.  It’s delicious.

Here’s how I make mine:

You can make this vegetarian if you use a product like Morning Star farms veggie crumbles.  This is how I make Liv’s  all the time.  Just sub in the crumbles for the meat.

Brown your ground beef….

Add in your taco seasoning mix…..

Chop half an onion and saute it with the ground beef.

Beat two eggs until very well combined.

Add one cup of milk to your eggs…..

Now add one can of chopped green chilies and one box of Jiffy Corn Muffin Mix.

Put the ground beef mixture in a well oiled or buttered 9 x 13 pan….

Pour your egg mixture over the top….

Cover with two cups of cheese….

And bake for 25 minutes in a 400* oven.

Glorious!

Now add your favorite toppings:  We love lettuce, onions, refried beans, tomatoes, avocados, salsa, and sour cream.  You can add anything you like or eat it plain, but either way it is absolutely delicious! 

Denton’s favorite is ranch dressing!  It is SO good!
