Hello again.  Are you having something new and yummy for supper this week?  It’s so hot here I don’t want to cook anything, but unless we want to go hungry I suppose I will.  Is it hot where you live?  Fall will be here soon, right?  RIGHT?

Here is what we ate this past week:

  • Tuesday.  I tried a new to us recipe for grilled chicken, but we weren’t fans.  Baked potatoes however are always a hit at our house.  A giant salad doesn’t hurt either.  Yes.  I almost burned the bread.  Sigh.

  • Wednesday.  Soup beans and salmon.  My favorite day of the month.  I made the potatoes into potato wedges and everyone loved them.  It was easy.  No the onions are not burned, why do you ask?  Sigh.

  • Friday.  Liv had her top wisdom teeth out last week and has been craving our local pizza joint ever since.  We finally decided that she had healed enough for us to cut her’s into teeny tiny pieces just big enough to swallow…….and they are on vacation!  The audacity of a local family owned business to take a single week off!  That was sarcasm just in case you couldn’t tell.  Anywho, this is from Pizza Hut.  It was good, but it is definitely NOT our local people’s pizza.

  • Saturday.  Leftover roast or whatever else you can find.  Yum.
  • Sunday.  Your guess is as good as mine!  We didn’t starve, so I’m guessing that we all ate something.

What’s for supper at your house this week?

Welcome back!  Have you had a great week?  Is it high summer where you live?  It is hot as blazes here right now.  If it would only rain…… You have heard this refrain from me many, many times in the past.  A good soaking farmers rain.  This will heal the world, in my opinion.

My consolation is that there are only 64 days, 9 hours and 26 minutes until FALL is here!  (Well, when I am typing this, that is.) 😀

Here is what we ate this past week:

I made hamburgers, but I also made these caramelized onions to put on top of them and they were amazing.

Denton and I gave blood last week, but before we left I made a giant pot of Alfredo.  You can  see I added a bunch of cracked black pepper to mine.  Yum.  An update I need to include with this recipe is to switch out the milk with heavy cream.  Divine.

Baked potatoes with a side of bacon, summer tomatoes, crescent rolls and a turkey club on buns.  I had intended to bake chicken but it just seemed off to me and $8.00 worth of chicken is not worth a night of food poisoning at my house so we didn’t eat it!

Our favorite local pizza joint.  It is so, so good.

Grilled Italian chicken with baked potatoes, steamed broccoli and crescent rolls.  This time the chicken was delicious.

Potato soup, with bacon, biscuits and broccoli salad.  Oh I love this meal.  And so does everyone else in my house, so we could eat it every week and never get tired of it.

Chinese!  My favorite!

Welcome friends!  Have you had a great week?  It’s summer here in Virginia.  Which is excellent for the tomato plants, the blueberry bushes and all the yummy garden things, but bad for me – heat, humidity, and gnats – no thanks.  It’s also mosquito season, so I will be hiding out here in my house until October if you need me.

Here is what we ate this past week:

Burgers, corn on the cob, tomatoes and onions with chips.

Taco salad and burritos.

Roast with potatoes and carrots, with roasted onions, green beans and cornbread muffins.

Tuna sandwiches, chips and perfect boiled eggs.

Teriyaki chicken with rice.  This was a new to me recipe.  It was just okay.  I still can’t find a teriyaki chicken recipe that I’m happy with.  Do you have one?

Welcome to another week!  I hope you are well.  It’s slowly been trying to turn into summer here, but we have heavy rain moving in for the next few days and our high tomorrow is supposed to be 55*.  Yay for me!  I doubt that everyone else will be as happy as I am.  Have you started a garden of any kind yet?

I have  a lot of things that are in pots, but aren’t in the ground.  My mama told me that she had talked to my great Aunt Bay and this past Thursday and Friday were good planting days.  Which I missed.  I did put about 729 creeping Phlox seeds into one of my beds though, and they are coming up very nicely.

I also noticed that the deer are looking for a free buffet….

Nice.  They are pretty until they start eating all of the things I want to eat too.  And then they will end up as jerky.

Here’s what we ate this week:

I tried two new recipes.  One was a Buffalo Chicken pasta.  I made garlic bread with a loaf of whole wheat bread from my giant freezer to go with it.  It was pretty good, but I would not say that I loved it.

I also made chicken and yellow rice which everyone LOVES at my house.  We had corn bread muffins and coleslaw to go with that.  Do you make this at your house?  I hesitate to post the recipe, because it’s so easy.  

The other recipe I tried was a Ranch chicken and bacon sandwiches on buns with chips and pickels.  I really didn’t like this one.  Hayden REALLY didn’t like it.  I thought, how can you not like a chicken sandwich with bacon on it, but really….I didn’t like it.  

We also ate a vat of potato soup with oven bacon and homemade 5 minute no knead bread.  It was delicious.

The rest of the week was leftovers, or snacks foods, or whatever you can find.  No one died, so I count that as a win.

Hello again!  I hope that you are holding up well in this strange world we are living in right now.  This week, one of the ways that I made things easier on myself was cooking once and eating three different meals out of that one night of cooking.  If you are thinking to yourself, Wow, she really has herself together!  Nope.  It was a total accident.  A happy accident, that I will definitely try to implement from now on.

Here’s what we’ve been eating:

Monday

Popcorn.  Hahahaha.  Apparently it was eat what you can find.  I wanted popcorn. Yum.

Tuesday

Baked chicken with baked potatoes, roasted asparagus and buttered bread.  This recipe turned out much better than the one I tried last week.  Do you want the rub recipe for the chicken?

Wednesday

Sliced leftover baked chicken on buns with chips, pickles and strawberries.  I didn’t even realize that I did this cook once and eat a different meal twice in one week.  I cooked the chicken the first night and then the next night we ate it on buns and it was even better.  I love it when cooking is easy and delicious.

Thursday

Taco salad with chips and salsa.  Okay.  Here is how I got three nights of meals out of one night of cooking.  I had three pounds of hamburger meat in my refrigerator that I needed to do something with.  My go to is always hamburgers, but that doesn’t stretch three pounds of meat very far.  So I decided to go with taco meat.  I cooked the entire batch and seasoned it with my homemade taco seasoning.  The first night we ate taco salads.  Yum.

Friday

Taco’s.  The second night we had taco’s on soft tortillas with chips and salsa.

Saturday

Taco Pie.  On Saturday night we had taco pie.  Oh, how I love this meal.  I absolutely crave it sometimes.  I know to some of you, you are thinking that’s not three different meals, it’s all taco’s.  All I can say is, go try the recipes that I have.  Yes, it’s all made with taco meat, but I promise you, you are getting three distinct meals that taste completely different from one another.

Sunday

Happy belated Mother’s Day!  I hope that you had a wonderful day and ate something that you love.  We had Chinese!  My family knows me well.  It was amazing.

What’s for supper at your house this week?


Hello again!  I hope that you are well and staying healthy.  Are you having wonderful, glorious spring weather where you live?  We are and I’m soaking it up.  Denton is pining for summer already, but when isn’t he?  I am hoping that spring time will last long into June this year, but I don’t think that’s going to happen. 😀

Here’s what we’ve been eating for the past two weeks:

Monday.

Whatever you can find.  Some days…… There is always something to eat in the refrigerator.


Tuesday

Taco salad with salsa and chips.  Also, bean and cheese roll ups.  Yum.

Hamburger, chips, strawberries and raw onions.  A favorite.

Friday

Chinese!!  I called our local Chinese restaurant and we picked it up outside the restaurant 30 minutes later and it was divine.  Just looking at this photo makes me want it again.

A BIG breakfast for supper.  I made homemade biscuits that Denton keeps telling me are the best he’s ever eaten in his life.  I don’t think they are quite that good, but they are yummy.  Sausage, hash browns, eggs, and gravy.  Delicious.   I forgot to take a picture so you only get a leftover biscuit with jelly and sausage.  More yummy.

Monday

Hamburgers again.  With more strawberries and chips and onions.  When I don’t feel like cooking, you can see what is easy in my world….

Tuesday

Tuna sandwiches with pickles, strawberries and chips.  Another easy night and I’m glad that Denton suggested it.  I LOVE tuna sandwiches.

Wednesday

Chili and grits.  I almost always eat corn chips with my chili and grits, but I had already opened a bag of tortilla chips earlier when we had taco salads and didn’t want them to go stale, so…..  They were delicious.  It was the Walmart brand that has chili and lime on them.  YUM.

Thursday

Baked chicken, baked potatoes, roasted asparagus, and buttered bread.  I tried a new recipe for the chicken.  It was quick and easy, but I thought it had WAY too much cumin and chili powder in it, so I will try again and make up my own version and let you know if it turns out any good.

Friday

Soup beans, Mac and cheese, roasted potatoes, onions and broccoli with salmon and cornbread muffins.  My comfort food.

Saturday

Our local Italian pizza joint.  Oh I love their garlic bread with sauce.  I could just eat that and be happy, but their pizza is delicious too.

Hello again!  I hope that you are staying home and staying well. We are having glorious Spring weather at my house at the moment:  cool, rainy, sunshiny, freezing, warm to hot days and everything in between.  I LOVE Spring.

My Mama said to me the other day that she hoped that it would warm up so we can all be outside more and I thought to myself:  NO.  I may have shouted that out loud, I’ll have to ask.  As you can guess, I am not ready for it to be anything like summer time yet.  However I am ready to get my tomato plants into my rose beds.  Are you planting anything this year?

Here’s what we ate for supper for the last two weeks:

Hamburgers on the grill with raw onions on the side.  Denton loves me very, very much.

What’s for supper at your house this week?


Hello again!  I hope that you are staying home and staying well.  My kitchen is cleaner that it’s been in a long while.  I can only justify my reading for so long and then I have to find something to clean, so that I can get back to my current book.  How are you dealing with being confined up to this point?

I want to declutter desperately, but I already have one pile in the garage just waiting to go to it’s new home.  I am trying to come up with a better solution to all of the things I know I need to get out of my house….I’ll let you know what I come up with.

Here’s what we ate for supper last week:

Pan fried pork chops, mashed potatoes with biscuits and gravy.  I have no idea why I didn’t get a photo of this.  They were divine.  I don’t say that lightly, because pork chops are not my favorite, so you should try the recipe!

Taco Chicken Chili.  This was a new to me recipe and I deem it a fail.  I didn’t follow the recipe exactly and I don’t know if that was the problem or not.  The quesadillas were good though.  So not a complete loss.Are you pulling things out of your freezer stash yet?  It’s not hard to pull out ribeyes and cook them for supper.  I also had leftover mashed potatoes that I turned into potato cakes which were fantastic.  I’ll give you the recipe later.  And yes, as Denton pointed out we had TWO types of potatoes for supper this night.  I LOVE potatoes.

Meatloaf, with roasted potatoes, carrots and onions.  Along side my favorite green beans and corn bread muffins.

We also had Panko chicken with baked potatoes and a giant salad and buttered bread on the side.  Didn’t get a photo of that either apparently.

However, I did get a photograph of the chicken and dumplings I made.  I am going to say that these were okay.  Denton and Hayden loved them.  I just thought they were okay.  I need to work on my dumplings.  They are not even in the same galaxy as my Great Aunt Bay’s.  It might take me forty more years to get there, but I will get there!

At the end of the week we had leftover rib eye sandwiches with the extra steak I made.  Didn’t get a picture of that meal either, sigh.  It was delicious.  Slice the steak thin, put it on a buttered hamburger bun or whatever kind of bread you can get your hands on, sprinkle on some salt and garlic powder.  YUM.  Supper.

Hello again!  I hope that you are staying home and staying well.

Here’s what we ate for supper last week:

We had a birthday at our house.  It feels very strange to order food and have very minimal contact with the people who make and sell it to you.  But we are grateful for them.

Soup beans, roasted asparagus, onions and potatoes with corn bread muffins, Mac and cheese and salmon.  My FAVORITE.  I need comfort food, especially right now.

I pulled some ribeyes from my giant, lovely freezer friend in the garage and baked some yummy potatoes with some sautéed asparagus and rolls.  If you haven’t noticed I love asparagus.  Liv LIKES it, but the rest of the family just tolerates it.  That’s okay, Denton eats greens from the can. 😥 

I also made a roast this week, with potatoes, carrots and onions in my crock pot.  I love crock pot meals.  Corn bread muffins and green beans rounded everything out.

Tuna sandwiches.  Do you eat the heels of your bread?  I save them for just such meals as this.  If you toast them, they are delicious.

Potato soup, with bacon and rosemary biscuits.  I wasn’t a fan of the biscuits, but I had this mix that needed to be used up and Denton and Olivia loved them.  Meh.

And last but not least.  The birthday boy turned 22 this year.  Now you might be thinking, that poor child, having a birthday during this crisis has caused his Mama to resort to using candles like that.  No.  I just decided that those candles were going to be lit for 32 seconds and that I wasn’t spending the money on new ones.  Hayden just laughed.  I’m pretty sure that between Hayden and Olivia I have used that number two for the last four years…..Waste not, want not.  Right?  Right.  P. S. S.  He got brownies for his birthday cake.  When I asked what kind of cake he wanted, he responded that he didn’t want one.  Hayden isn’t a big sweets fiend like the rest of us.  When I insisted that he had to have something sweet for me to stick his jury rigged candles into so that we could sing Happy Birthday, he insisted that he didn’t want anything.  So I made the executive decision for him.  He actually likes brownies and I knew he would eat a few of them, so brownies it was.

Hello again!  I hope that you are well.  It’s a bizarre and surreal world that we are all living in at the moment.  All of this was made even harder when we lost our ancient and beloved Batman.  He was as sweet as they come and he has left a giant hole in our hearts.  I am sorry for the radio silence for the last couple of weeks, but it just felt right to take a step back and just be at home and to try to tune out the very loud noise of the world.  Not trying to bury my head in the sand, but just turning the volume way down, if you understand what I’m saying.

I hope that you have plenty of food to feed your people.  I did manage to write everything down for the past couple of weeks, so let’s see what I managed to cobble together for my people!
