I plan out my weekly menus with leftovers in mind. Every time. I do NOT want to have to cook every day. Do you do this too? I know that when I make a roast in the crock pot that we will be having roast beef sandwiches the next night on garlic toast. It’s my way of having leftovers that aren’t really leftovers. Sortof.
Here’s what we ate last week.
Monday – May 28
- Leftovers!
Tuesday – May 29
- Soup and sandwiches – You know the kind from a can that’s easy and simple.
Wednesday – May 30
- Roast with potatoes, carrots and onions
- Roasted veggies (cauliflower, onions, carrots and cabbage) for Liv with roasted chickpeas for her protein
- Coleslaw
- Green beans
- Corn muffins
Thursday – May 31
- Leftovers! Roast beef sandwiches are awesome.
Friday – June 1
- Popeye’s Chicken, YUM. Everyone in our family agrees, Popeye’s has the BEST fried chicken, well excluding Liv since she’s never had it, hahaha.
Saturday – June 2
- Leftovers!
Sunday – June 3
- Spaghetti
- Fettuccine
- Garlic Bread

Last week we were on vacation so we ate out for every meal. This week we’re having homemade pizzas, steak/ pasta salad/ salad, Fish/ bkd potato/ broccoli, Burgers/ pasta salad/salad, Spaghetti & sauce, chicken/rice/broccoli casserole, and Shrimp stir fry.
