Cheesy, Spicy, Roasted Chickpeas Recipe

Do you like roasted chickpeas?  This is one of Liv’s favorite snacks.  They are crunchy, cheesy, and spicy.  Yum!

Start out with a can of garbanzos.  Drain and rinse them well.

Next gather your next ingredients.  And helpers.  Hello, Batman.   Yeast flakes.  Seriously, yummy.  This is what gives them their cheesiness.

Garlic and chili powders.

Olive oil.

Salt and pepper.

Mix everything together.  And place on a sheet pan.  Bake at 350* for 45 minutes.  Shaking the pan about every 20 minutes.

Yumminess.  Crunchy, salty, spicy and cheesy all at the same time.

These are best the same day.  They will lose some of their crunchiness if you store them in a lidded container, but they are still great.

Ingredients
  

  • 1 15 oz can of chick peas - garbanzo beans
  • 1 TBSP chili powder
  • 1 TBSP garlic powder
  • shake of salt and pepper
  • 2 TBSP olive oil

Instructions
 

  • Drain and rinse the chick peas.
  • Mix chickpeas with the rest of the ingredients.
  • Pour onto a sheet pan.
  • Roast in a 350* oven for 45 minutes.
  • Shake pan every 20 minutes.
  • Enjoy!

When something doesn’t work, change it.

I am a very follow the list type A person.  I like lists.   And I like checking things off of said lists.  It keeps me calm – most of the time.  I like knowing what’s going to happen.  At all times.  Poor Denton.  He is definitely not a list maker and checker off’er.

All of that to say that I am going to change how I document my What’s for supper? category.  It just isn’t working.

Now you are going to think I’m crazy, because I just laid out for you how I love my lists and following them.  But there is a caveat.

Each week I make a meal plan on paper.  To do that, I check to see what’s on sale.  I also check to see what I have on hand.  Then I quickly come up with at least six days of meals.

I love being able to quickly look back at what we’ve had to eat for supper, because this way I can try, try, to change things up occasionally.  Since all the other’s in blog-land post their weekly meal plans ahead of time, this is what I’ve been doing too.  Only, it’s not working for me.

For all of my list making and checking off, I have rarely  stuck to what I laid out for the week.  If I come home and have had a mentally exhausting day, I do NOT want to spend an hour in the kitchen.  So, I’ll change my roast, potatoes, carrots, onions, green beans, corn bread, and coleslaw to tuna sandwiches that night.  I can be flexible, it just has to be on my terms apparently.  What I’m trying to say, is I like having a go-to list of meals that I have everything on hand to prepare each week.

To soothe my write it down, so I’ll have access to it later soul, instead of being like everyone else in the land, I’m going to wait and give myself and you a monthly review of what I ACTUALLY prepared each day in a month.  Aren’t you so happy about this!  I am.

February is already making me less stressed.  Does anyone else hyperventilate over the fact that you wrote down baked chicken with baked potatoes and garlic bread and you actually had sloppy joes instead?  No?  Just me?

That’s okay.  I can live with that.

What’s for Supper? Our Weekly Menu Plan.

At least once a month I take a moratorium on going to the grocery store.  Especially this time of year.  It’s madness.  Madness I tell you.  And I want to avoid stepping foot in the stores if at all possible.  Another benefit is that it’s great on my pocketbook too.

Each week when I do go into the grocery store, I always look for screaming good deals to stock my pantry and freezer with.  This gives me that buffer that I need to be able to skip a week of grocery shopping.

Here’s what we are having out of the freezer and pantry this week.

Monday ~ Breakfast for supper

  • Biscuits
  • Sausage
  • Hashbrowns
  • Eggs
  • Gravy
  • Honeycrisp apples

Tuesday

  • Taco night
  • Chips and salsa
  • Quesadillas

Wednesday

  • Soup beans with cornbread or rice
  • Kraut and polish sausages
  • Salmon Bombs
  • Roasted potatoes and cauliflower

Thursday

  • Copycat Olive Garden Chicken Gnocchi Soup
  • Salad
  • Homemade breadsticks

Friday

  • Pizza night!

Saturday

  • All day Chili with Grits

Sunday

  • Chicken Sandwiches on buns or Hamburgers
  • Chips
  • Pickles or giardiniera.  I love the Mezzetta brand.

That’s the plan.  We will see how it works out!

Irish Pub on Washington Street. Lewisburg, WV

At least once a year, Denton and I travel over to Lewisburg, WV and we make sure that we stop in here to have a pint.  I always get something different.  This time I absolutely loved what I ordered.

wp-1479744477337.jpgI wasn’t very hungry, but I can never pass up bread of any kind, so I opted to go with their Pepperoni Roll.  It was really good. Hot fluffy bread, gooey cheese and delicious pepperoni.  These are made at the local Bakery.  Note:  If you are really hungry, this isn’t going to be enough food.  It wasn’t really a meal.  Just a light snack, but that was enough for me.

Denton can never pass up their Irish Stew.  He says every single time that something about it reminds him of his Granny’s stew.  That’s enough to get him to order it.  He went with a Guinness.

wp-1479744499710.jpgThis time though, he also ordered their Corned Beef with Swiss on Rye sandwich.  He loved it.  He let me try a bite and it was scrumptious.  Bread.  Their hard rolls are amazing and perfect for finding any leftover stew……

But what I really loved this time was this.

wp-1479744510737.jpgSamuel Smith’s Cherry Ale.  Oh my.  This ale.  It was absolutely delicious.  It is imported from Tadcaster, England.  I now NEED to go to England, just to see where this stuff is made.  Not really, but I do want to go to England and I will definitely order one of these ales while I’m there.  The fruitiness is very evident with the first sip, and it is beautiful when poured into a chilled pint glass.

Their food menu is small, but very good.  But this is a pub after all.  They have over 100 beers, more than 25 types of Whiskey and copious amounts of wine and cocktails.  It’s a sweet little pub.

If you ever find yourself in Lewisburg, WV (voted the Coolest Small Town in 2011 by Budget Travel – and they have the sign to prove it) you should stop in here for a pint yourself.

There are a multitude of Antique shops that my mother-in-law loves.  Lewisburg, WV is also the home of the West Virginia State Fair that happens every August.  Liv and I saw Victoria Justice here in 2012.

Remember, it was August?  She wore that thing the entire day and through the concert.  It was well worth the $20.00 I spent on it, because she still wears it.  Beware of state fair pricing!

You’re going to love Lewisburg.  Especially the pints.

What’s for Supper? Our Weekly Meal Plan.

wp-1479309900192.jpgIt’s Monday again, another week about to be added to our calendar year.  Soon it will be 2017!  This year has flown by.

Last week we stuck pretty close to what I had planned out, for once.  Yesterday I actually got that roast made and it was delicious.  Next time, I’ll have to buy a bigger roast so we can have leftovers for a few days, at least.

It’s Monday again.  Therefore, I need a plan for the week or we will all be eating Lucky Charms for supper every night.  Last week had a couple of hiccups and I changed things around, but that’s OK, I’ll just shift some of last weeks meals to this week!

Monday

  • Grilled hamburgers
  • Chips and all the stuff.

Tuesday~ Breakfast for supper.

  • Pancakes
  • Eggs
  • Bacon
  • Hashbrowns.

Wednesday

  • Soup beans and cornbread
  • Sauerkraut and polish sausages

  • Roasted potatoes.

  • Potato soup

  • Bacon.  A fail from last week, didn’t happen.

  • Roast (didn’t happen last week either – we had chili instead)

Salmon Bombs

Every Wednesday I workout with a personal trainer for an hour.  Doesn’t that sound fancy.  It’s actually an exercise class based around boxing that they have in my building each week.  It makes me feel good; after the class is over anyway.  So to reward myself for putting in the effort every. single. week. I make these on Wednesday’s.  Heaven, absolute heaven in my opinion.

My family has made these at least once a week for my entire lifetime.  I’ve never asked my mother if her mother made them (she died when my mom was 12), but I know that my step-grandmother did.  My mother always made these into patties and fried them in a cast iron skillet in about a half inch of oil (canola or vegetable oil not olive because of the high heat).  But after I had both of my kids, standing in front of the stove for more than 30 minutes became a really big inconvenience, so I adapted the recipe to be able to deep fry multiple batches at once.  This recipe is the result.  I love it!

P.S.  My family calls these Salmon balls, but that just sounds wrong on the internet, so Salmon Bombs are born.

wp-1478180389855.jpgI love this brand of salmon, so I usually stock up on it when I find it on sale.  But a couple of weeks ago we were out and I stopped in at ALDI’s and tried their brand and it was really good!wp-1478180367279.jpgFlake the salmon.

wp-1478180214375.jpgPour in the 2 capfuls of lemon juice.  I almost always cheat and use the bottled.

Here’s the handy dandy recipe I use each week.

Salmon Bombs

Ingredients
  

  • 14 3/4 ounce can of Pink Salmon
  • 1/2 cup finely diced onion
  • 2 tsp. lemon juice
  • dash of salt
  • 1 tsp. pepper
  • 1/2 cup panko breadcrumbs
  • 1/8 cup cornmeal
  • 1/8 cup flour

Instructions
 

  • Drain off some of the liquid from the can of salmon.
  • Flake the salmon in a large mixing bowl.
  • Add the diced onion, salt, pepper, lemon juice, panko, cornmeal and flour and mix until it holds together.
  • If your mixture seems too tacky, add flour until the mixture will hold together without being wet.

What’s for Supper? Our Weekly Meal Plan.

I like meal planning.   No, I love meal planning.  Not the act itself or the process of coming up with what we are going to have each night for supper, but the relief and ease every day of the week with knowing what I’m going to put on the table for everyone to consume.  I am seriously relieved to wake up each day and not freak out about what’s for dinner.  Even if I change my mind that day, I still have a plan in the works and it keeps me from throwing up my hands and ordering Chinese food.  Which isn’t a bad supper in my opinion, just bad for our wallet’s two or three times a week.

Yesterday we ended up with lasagne and garlic toast and it was delicious.  Here’s what I I have planned for the rest of this week.  Maybe.

Monday

  • Hamburgers
  • Chips and all the stuff.  Like, pickles and giardiniera.  I love the Mezzetta brand.

  • Potato’s soup with bacon and biscuits.
