Cherry and Pineapple Dump Cake

I made this for Denton’s birthday a few weeks ago and we ate the entire thing in two days.  It is a keeper!

Here’s how I make it:

Mix a can of cherry pie filling with a can of crushed pineapple together in a baking pan.

As you can see, I couldn’t find my can of crushed pineapple, so I diced up some pineapple rings I had instead.  It worked just fine!  Use what you have people.

Next sprinkle an entire box of cake mix over the top of the fruit mixture…..I used Duncan Hines Classic Yellow cake mix, but I’ve also used others, just use what you have and have a taste for!

Cut up an entire stick of butter and place all over the top of the cake mix……Cherry and Pineapple Dump Cake

And bake.  It’s so, so good!  And easy too.

Ingredients
  

  • 1 (21 ounce can) cherry pie filling
  • 1 (20 ounce can) crushed pineapple
  • 1 box cake mix
  • 1 stick butter

Instructions
 

  • Mix together cherry pie filling and crushed pineapple in a baking dish.
  • Sprinkle the cake mix over the top of the filling.
  • Cut the butter into pats and place over the cake mix.
  • Bake at 350* for about 30 minutes or until golden and bubbly.
  • Enjoy!

04.26.21 ~ What’s for supper at your house this week?  

Hello friends!  Spring has sprung here in our neck of the woods.  We should only have one more cold spell in May for Blackberry winter and then the heat will be on if everything goes the way it normally does here in Virginia.  I’ll take just a little more spring please.

Here’s what we ate last week:

I made pecan and panko pork chops with roasted red potatoes, green beans, stuffing and crescent rolls.  I thought it was good, but Denton and Hayden weren’t particular fans of the pecans on pork, hahaha.

Chicken sandwiches with pickles and chips on the side.  Always an easy, simple supper.  But I do need to start making my own chicken for the sandwiches.  But that negates the easy part, right?

Two kinds of shrimp with baked potatoes, broccoli salad and buttered bread.  Yum.

Soup beans, with a terrible box of Mac and cheese, salmon, kraut and weenies, and the best homemade cornbread I’ve ever made.  I’ll try to remember to take pictures and post the recipe next week.  It was so good.  I also made a new kind of roasted potatoes.  They were delicious, but I prefer just fried potatoes or normal roasted potatoes with my soup beans.  These would be great as a side with chicken or pork, so I’ll make the recipe and post it soon too.tuna sandwichesDenton requested tuna sandwiches again, which I am always happy to oblige him with.

I also made another dump cake last week.  I’ll post the recipe tomorrow.  It is so easy and delicious, I know you’ll love it.

Groceries

This weeks grocery budget went to our local Food Lion.  I spent $82.00 exactly which will never happen again in my lifetime.  I have one more grocery haul to make in April before I see what our total will be for the month.  You can see what we’ve spent in April so far down below.  We will have five weeks of grocery shopping in this month though, since I switched up my shopping day.

Are Saturday’s as insane in your town as they are in mine now?  Liv and I used to do our grocery shopping for the week on Saturday mornings.  We decided to pick a different day because our local stores were being swarmed and I wanted to hurt people.  We tried a Sunday, a Tuesday, but I always go into my office on Wednesdays, so I just decided to tick that off my to do list then.  I am surprised at how many people are out and about on a Wednesday afternoon too.  I hate grocery shopping, and when I have to dodge and weave to get it done does not make me a happy person.  Sigh.

04.19.21 ~ What’s for supper at your house this week?  

Hello friends!  It’s a new Monday.  I hope that your week has started out well.  I’ve been sharing what we eat each night on my Instagram page if you want the scoop before I post it here each week.  I am a creature of habit and routines so hopefully this will keep me on track.

Here’s what we ate last week:

Soup beans and salmon

Soup beans, with roasted onions and potatoes, salmon, and butter fried mushrooms – boy those don’t look good, but they were delicious.

Totino’s pizza for an easy supper, with cucumbers and blueberries.  Sometimes simple is best.Taco Salad

Fettuccine Alfredo with my super cheap garlic bread, a giant salad and a big glass of water.  

This night was a find what you can, kind of night.  I had Strawberry Awake cereal.  It’s the Walmart version of Special K Berries.  Both are delicious, but if one of my local stores doesn’t have Special K on sale, I’ll always buy the off brand.  YUM.

On Sunday, Liv and I had to run into to town and we brought home supper from a local place.  I had a Shrimp Po’Boy with fries and my usual big glass of water.  I still drink my beloved soda too, but I’m trying to get more water in and drinking water with a meal is easy.

This past week I went into two different grocery stores:  Walmart and Food Lion.  I spent the bulk of my grocery budget this week at Walmart, but I did run into Food Lion for a couple of necessities – Sprite Zero and Doritos.  What are your junk food must haves?  Ours are soda and chips.  We always have them, and they will be eaten by someone.  The soda changes per whatever is on sale at that moment.  I prefer Pepsi One.  GASP.  If you had told me ten years ago that I would be drinking a Pepsi of any kind I would have laughed myself silly.  But this is reality, hahahaha.

What’s for Supper? 04.12.21

04.12.21 ~ What’s for supper at your house this week?  

Hello friends!  I’m finally back at this weekly update for what we eat in a week.  I have these moments where I am totally not happy with the way I’m doing things and I want to completely change everything up.  BUT, I don’t know exactly what I want to change it to and it becomes a vicious cycle in my brain.  Can you relate?  I drive Denton absolutely bonkers.  For someone who resisted change for so long, the older I get I seem to swing from one thing to the next very quickly now, hahahaha.

Anyhoo, I have decided that I am going to post my picture of what we eat each day on my Instagram and I’ll use this space to link the recipes.  Basically nothing will change on the blog, but I’m trying to keep up some momentum for myself and the crazy town that my brain lives in believes that posting to Instagram each day will give that momentum to me.  Yes, I know there is probably a disorder or something along those lines that I fit into, so don’t mention it, okay?  Okay.

After all of that hullabaloo, here’s what we ate last week: P.S.  thanks for hanging around!

tuna sandwiches

Tuna sandwiches with TWO kinds of chips and pickles.  Fancy.  Actually I like the chips at the bottom of the bag.  You know the ones, the ones that no one in your family will eat and they get thrown away.  Well, I actually like those because they are already broken up for me.  If I have whole chips, I break them before I eat them.  Yes, I know I am a weirdo.  I am completely fine with that.Roast beef with potatoes and carrots

Soup beans, salmon, roasted potatoes, onions and asparagus.

A giant salad, garlic bread and spaghetti with an enormous glass of water.  I always forget to include my water with my pictures.  

Ham, mashed potatoes, roasted asparagus and carrots, with crescent rolls and perfect eggs.

Even though you can’t see it, there is Taco Pie under that mound of lettuce.  With tortilla chips and salsa on the side.

I didn’t keep up with my grocery totals – at all – while I was taking my hiatus from this page.  I am very surprised that the total for March wasn’t worse.  I know that it isn’t because I have been deliberately eating from our garage freezer for the last month and half.  All of the meals that you see above, the meats came directly from my freezer.  I haven’t been buying meat lately so my grocery total is directly from fresh fruits and  vegetables and all of the miscellaneous things that get thrown into the cart, like potato chips.

Once we eat everything down in the freezer, I’ll slowly start adding to it again from all of the clearance deals I find later in the summer.

What’s for Supper? 03.15.21

03.15.21 ~ What’s for supper at your house this week?  

Hello friends!  I hope that you are doing well.  I missed last week’s post, due to being indisposed.  That’s a polite expression for the misery, but I lived through it.  I said the older I get the longer it takes to recover from terrible things like a stomach bug.  But you are definitely not here to hear about that.  In the meantime, we are enjoying spring like weather.  We will discuss the fact that we will have freezing rain later this week, and we’ll enjoy the Spring while we have it!  Right? Right.

Here’s what we ate last week:

Over the past two weeks I managed to take seven photos of the food that was eaten at our house.  Here is what they were:

Burgers.  Burgers with chips and pickles is always a go to when I need something easy.

Alfredo with a giant salad  and garlic bread.  I used frozen pappardelle pasta.  Everyone but me liked it a lot.  It may have been because I had been sick, so I’ll definitely try it again.

Chili with grits and raw onions.  Comfort food at its finest.Our favorite quick Italian pizza place opened back up.  Yay!  It was excellent.

Walmarts version of Lasagna with a giant salad and my bread.  Its just okay in my opinion. I would much rather have my “fast” version.

Soup beans with salmon, Mac and cheese, and roasted veggies.

McDonalds.  What can I say about that?  It was fine.

Taco salad with chips and salsa.

Roast with everything, corn muffins and coleslaw.  Yum.


Groceries

Since I missed last weeks post, I decided to just list everything below that I spent the first two weeks of March on groceries.

I didn’t even try to cull out all of the non food items.  In the perfect world where I live inside my head, sometimes I do this and keep everything straight.  But reality is that I don’t live in a perfect world, so all of the shampoo, face wash, toilet paper and cat litter get lumped in with milk, bread and everything in between.

Are you better at this than I am?

03.01.21 What’s for supper at your house this week?  

Hello friends!  I hope that you are doing well.  I am totally behind, but valiantly trying to get back on track.  We shall see.  Are you seeing hints of Spring where you are?  We woke up to a shivery 28* this morning, but are looking at steadily increasing temperatures for the next little bit.  Now that I’ve updated you with our weather, lets get to the food.

Here’s what we ate last week:

Hot dogs without chili (again) with a variety of chips and broccoli salad.  I had another craving.

03.01.21Hamburgers with onion rings and French fries from a local place in town that opened up recently.  They were just okay.  I don’t say that lightly.  But when EVERYONE’S food is just okay, it’s just okay.03.01.21

Liv and I did the grocery shopping on Saturday, so Sunday dinner changed when I found ribeyes on the clearance rack.  They were divine, with a giant salad, baked potatoes, and garlic bread.


Groceries:  I needed to run into our local Food Lion to find chicken nuggets (hopefully) and came out on Wednesday with a total of $54.93.  On Saturday Liv and I drove to the next town over to stock up on things that our Kroger had on loss leader and walked out of there with a grand total of $173.71.  I had a list and everything!  One of the things that went into the cart was the ribeyes, but I’ve already gotten two meals out of those, so my brain is already telling me that they were justified.  And delicious.

Mississippi Pot Roast

Mississippi Pot Roast Recipe


I have made this several times now and it is always delicious.  I make it specifically to eat on buns, rolls, or as Denton likes it, on tortillas.  Any way you eat it, it’s yummy!

Here’s how I make it:

I love chuck roast for this and my normal Sunday dinner type roast that I make.  But if you don’t have a chuck roast, just use what you have.  

I put the roast in the bottom of my slow cooker, sprinkle on the ranch dressing package, slice the butter and scatter it around and throw in around seven or eight peperoncini’s.

Cook it on low for seven to eight hours, or as I normally do – about four hours on high. Shred everything in the pot and serve however you deem best.  Anyway you serve it, it’s going to taste divine.

NOTE:  Yes, I know that most recipes call for au jus to go into the pot too.  I can never find it at my store, so I just leave it out!  Mississippi Pot Roast Let me know what you think!

What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  We had snow for the third week in a row.  You already know what I’m waiting for.  However pretty it is, and it does melt quickly, I’m still just over here waiting to plant my tomatoes….

Here’s what we ate last week:

Thick cut pork chops with baked potatoes and buttered bread.  There was a salad to go with this, but I somehow missed it when I took the photo.

Baked “Lasagna” with garlic bread and giant salad.

Hot dogs without chili, perfect boiled eggs and chips.

Potato soup, oven bacon and biscuits.  YUM.

Takeout.  But I did make my own green beans!

It was a “whatever you can find” night.  I had hot dogs without chili again. Sometimes you just want something and you have it.  Delicious.

What’s for Supper? 02.08.21

What’s for supper at your house this week?

Hello friends!  I hope that you are doing well.  It snowed again this past Saturday night.  While it’s beautiful, I am so ready for Spring.  As always.

Here’s what we ate last week in no particular order:

I made pulled chicken on buns with chips and air fryer pickles.  We have a tavern in our area that makes these pickles deep fried and we love them.  These turned out really good, but I need to tweak the recipe before I share it with you.  Why yes, those are my Christmas dishes.  What do you use to eat on when you don’t run the dishwasher that morning? 😯 

Pancakes with bacon and hash browns.  Liv asked me why I do this to my pancakes.  No, it’s not very appealing to look at, but I can get a better coverage with my syrup this way with less, which doesn’t make me wish I hadn’t made pancakes for supper.  They were pretty good, but I won’t be using this recipe I found online again.

Soup beans with salmon, Mac and cheese, roasted onions and potatoes with fry sauce.  Yum.

Taco salad with a cheese and refried beans and onions rollup.  Delicious.

Roast chicken quarters with baked potatoes and roasted carrots and onions.  We had sweet Hawaiian rolls on the side.

It was a canned soup and grilled cheese night.  Everyone seemed to be content.  I also got Hayden to try my beloved Vegetable Beef which he has now asked for more than once for lunch, so I count that as a win.

Chicken and Yellow Rice Recipe

Chicken and Yellow Rice Recipe


This is another one of my very simple recipes that I’ve made for years.  I originally got the recipe from Denton’s Mama when we first got married.  If you need supper on the table in about 30 minutes, which will fill everyone up and not cost the earth, AND taste delicious, this recipe is for you.

Here’s how I make it:

First I fry my chicken with a little bit of butter and olive oil.  With salt and pepper.  You DO NOT HAVE TO DO THIS.  I do this (1) because Liv doesn’t eat meat.  You can boil the chicken in the water that you are going to cook the rice in and it will save you this step. Denton actually prefers the chicken boiled.  He loves the way it tastes.  But I don’t want to have to make two batches of separate rice, so…..You do you.chicken and yellow rice recipe

You can use any kind of yellow rice from the store.  This is what I had in my cabinet.  I have used this one – Vigo, I have also used Mahatma, Zatarains, Goya, Knorr, and I just saw this one on amazon which comes in bulk.  I’m going to give it a whirl too.  I can’t tell the difference in any of them.  But as I always say, you do you.  And then everyone will be happy.One note:  if you do take the time to fry the chicken separately, it will give it more flavor, but the rice has a lot of flavor to begin with, so it’s really not necessary.

I follow the directions on the rice packets and boil it until it’s delicious….

And then I chop the chicken and add it to the rice and it’s ready to eat!  I always separate enough for Liv to have at least a couple of meals with her Tofu.  It’s her favorite.  She asked for this to be her birthday meal this year.

At Denton’s request, I always serve this with my coleslaw.  And at my request, I always make cornbread muffins to go with it.chicken and yellow rice

Chicken and Yellow Rice

Cook Time 30 minutes

Ingredients
  

  • 2 (9)ounce packages yellow rice
  • 3 TBSP butter
  • 3 chicken breasts

Instructions
 

  • Saute your chicken OR boil it in the water you are going to cook the rice in.
  • Cook the rice per the instructions on your package with the butter.
  • Dice up the chicken and add to the cooked rice. And enjoy!

Notes

If you want to make this recipe vegetarian, just use Tofu or your choice of veggie protein in place of the chicken.
