What’s for Supper? Weekly Meal Plan 05.06.19

How did your week go last week?  Time feels like it’s in fast forward and slow motion at the same time for me right now.  Liv had cap and gown photos with all of the other graduates last week and she had a great laugh about that.

Liva is 5 feet and one whole inch tall.  So of course they put her on the front row.  But, they also placed the honor students in front of everyone, who apparently are all six feet tall.  To compensate she had to stand on the bleachers to be tall enough to be seen.  She still has high hopes of growing some more….

Graduation is in less than two weeks, and we are praying for good weather.  Their graduation ceremony will be outside this year to try to alleviate some of the space issues.  When Hayden graduated, they had it at our local college.  Even with the restrictions on how many people he could have, it was standing room only and everyone literally didn’t fit.  The police had to maneuver people into place to get the doors shut and halfway through the ceremony the air conditioner shut off.  Fun times…..

My graduating class had 88 people in it.  Hayden’s had 333.  I haven’t checked Liv’s yet, but it should be about the same as Hayden’s.  How many people were in your graduating class?

Anywho, here’s what we ate last week:

Monday   Ribs, sausages, corn on the cob and mac and cheese.  Denton fired up his new to him smoker and the ribs were amazing.  They set my mouth, esophagus and stomach on FIRE due to the amount of cayenne he used, but delicious.  I’m so glad to have someone else doing the bulk of the cooking once a week.  Hopefully he’ll keep it up!

Tuesday  Tuna sandwiches with pickles and chips

Wednesday   Salsa chicken taco’s with rice – chips and salsa on the side

Thursday   Chicken salad on toast, pickles and chips – frozen pizza for the kids…..

Friday  Leftovers, yum.  We seriously loved the salsa chicken taco’s.  There was ZERO left after our supper tonight.  I love it when I don’t have anything left to feed to the garbage disposal.  We try our best to eat all of the food we buy and prepare, but sometimes it happens.

Saturday   Del Sol.  We drove over to West Virginia on Saturday to visit a few of our favorite places there and we ate supper at Del Sol.  If you are ever in the lovely little town of Lewisburg, you’ll have to try it.  They have a very eclectic selection of food and it’s good.

What’s for Supper? Weekly Meal Plan 04.29.19

Last week was a busy week for us.  The weather has been typical Virginia springtime.  A high of 60* one day with a low of 27* and a high of 87* with a low of 62* another.  I LOVE it.  Don’t you love these weather updates?

Denton and I worked all day on our flower beds and the backyard this weekend, which caused me to lay on the sidewalk with Oreo at the end of the day while he planted the last of our pansies.  Denton just laughs, but I said this is why out of shape people have heart attacks shoveling snow in the winter – or black mulch in the springtime.  Gardening is not for the faint of heart.  Or people who need to exercise more, like me.

My blueberry bushes have already bloomed!  Yay!  Which is a miracle, because we had someone else mow the grass once last summer while we were on vacation and they mowed them down to the ground.  🙄  I’ll do a whole post about the beds, what we did, what we didn’t do, and mention the growing list of all the things that need to be done next.  Garage doors anyone?

Anywho, here’s what we ate last week:

Monday   Local pizza joint.  We have a new to us (it’s been open for a while) pizza place in town so we tried it out after traveling all day to get home from my family after Easter.  It was okay.  I don’t think it’s worth what we paid for what we got, but it wasn’t bad.  The problem I have with this is:  I don’t like paying money for something that’s just okay.  I can make okay pizza at home.

Wednesday   Grilled Italian chicken, baked potatoes, garlic toast and a giant salad

Thursday   Grilled chicken with rice and veggies

What’s for Supper? Weekly Meal Plan 04.22.19

It’s been another fantastic week of lovely weather.  Springtime.  I LOVE it.  I want it to last forever.  We traveled home to see my family last Friday and the weather was horrendous for getting from one place to another.  Thunder, lightening, pouring rain….  Great weather if you are at home with a book in your hand, terrible weather to be in a moving vehicle.  At one point the interstate was shut down to one lane which added almost three hours to our day.  When I win the lottery……I am only going to travel by plane.  Or helicopter.  Some mode of transportation that does not require me to sit in wall to wall traffic with raging lunatics.

Anywho, here’s what we ate last week:

Monday   Hamburgers, chips, and raw onions and tomatoes.

Tuesday   Our favorite Tavern.  Liva had a thing at school – Spring Extravaganza – she took second place in a Patriotism art contest.  Woohoo!!  We are so proud of her.  To celebrate we went to one of our favorite restaurants.  Yum!

Wednesday    Hot dogs, chips and corn bread salad.

Thursday   Garlic pasta and garlic bread

Friday, Saturday and Sunday  Eating with my family for Easter.  There is no place like home.  And home is where your family is.

On Friday my Mama made her homemade hamburgers which are Hayden’s favorite.

On Saturday we had our Eatin’ Meetin’ with all of the family who could gather and it was glorious.  Chicken and dumplings, mashed potatoes, ham, my Aunt Mary Jane’s green beans, deviled eggs, pasta salad, soup beans, corn bread, corn, and on and on AMEN.  My plate couldn’t hold it all.  Neither could my stomach.  And I didn’t even tell you about the desserts……

Sunday we had leftovers after church and they were even better.

Food never tastes as good as it does when you are surrounded by the people you love.  The best part of the whole weekend was being granted the time to just sit and talk.  Conversations with my people are so important.  I spent so many hours just talking – to my Aunt Mary Jane, my Aunt Anita, my Uncle Wyatt, my Mama and my Daddy, especially my brother and so many more – that I am still hoarse.  It was an amazing weekend.  I just wish ALL of my family could have been there too.  There are never enough hours in the day, and it never lasts long enough…..

What’s for Supper? Weekly Meal Plan 04.15.19

It’s a brand new week!  Spring is flying by and it’s going to be summer before I’m ready.  But today, at least in my part of Virginia we are having Redbud winter.  Our high today was 46* and in the morning we will have a low of 36*.  In the same day our temperatures will also get up to 77* tomorrow afternoon.  Isn’t the weather in Virginia amazing!  And that’s your weekly weather update.

Last week I was late (as usual) in getting out my weekly menu post and I received a lovely text from my brother.  He was wondering if he had missed it.  I love him so, so much.  If you feel like you are talking to yourself sometimes, just know that someone somewhere is listening.  Just like the little ears in your house every time you stub your toe.

Adam is one of the best human’s I know.  I miss him terribly.  I am so thankful for the technology we have that allows me to talk to him instantly, whenever I want even if it’s just a text.  Can you imagine what it was like for our ancestors who immigrated here from wherever in the world they came from?  Letters were their only hope of communication once they left their homes…..I can’t imagine the grief they felt for that separation.

Now that I’ve made everyone cry……

Monday   Baked fish, roasted potatoes, onions and sweet peppers.

Tuesday   Garlic pasta, chicken and broccoli.  This was absolutely amazing!  Let me know if you want the recipe.   It’s fast, simple and tastes divine.  My kind of recipe.

Wednesday   Taco’s, bean burritos, and chips with salsa

Thursday   Meatloaf, mashed potatoes, green beans, roasted onions and carrots, cornbread muffins and coleslaw

Friday   Papa John’s pizza!

Saturday   Leftovers! Yay!

Sunday   Soup beans, roasted potatoes, onions, and asparagus, mac and cheese and salmon

What’s for Supper? Weekly Meal Plan 04.08.19

Hello again!  How did your week go?  Denton and Hayden were in Dallas, Texas for the entire week last week, so it was just me and Liv for supper every night.  Be prepared, this was a make it fast and keep it simple kind of week.  Who am I kidding?!?  Most of my weeks, go like this anyway.

The weather here in Virginia was absolutely perfect.  Freezing cold in the mornings, so that you need a hoodie to go outside and high 60’s in the afternoons.  I love it.  I hope it lasts until October.  And that’s your wishful thinking weather report from Virginia.

Here’s what Olivia and I ate last week:

Monday   Spaghetti with garlic bread – This was a request from Liv.   Spaghetti is one of her favorites.

Tuesday  Hamburgers with chips and pickle spears

Wednesday   Puff Pastry Pizza  –  Yum!

Thursday   Leftovers!  Woohoo!

Friday   Sheet pan chicken thighs and legs with roasted veggies.  Liv had Fake Chicken parm with her veggies.

Saturday  Slow cooker pork loin.  This time I just shredded it, covered it in the BBQ sauce and we ate it on buns with onion rings and french fries.

What’s for Supper? Weekly Meal Plan 04.01.19

Hello again!  How are you on this fine Spring Monday?  The temperatures have dipped back down into spring-like days, so I’m a very happy lady today.  Our high today was 53* and I like it like that.  No snow, no sweltering hot days yet, just lovely cool springtime, with everything bursting into bloom.  Although, if I had seasonal allergies like everyone else in my house, I might not be so happy about it.  But, it smells wonderful!

One of my babies had a birthday last week and when I asked what they wanted for their birthday dinner, they asked for my potato soup.  Yes, it’s that good!  You should try it if you haven’t.

I also tried a new to me recipe that was AMAZING.  I am definitely going to be making it again, maybe with some different toppings.  I can’t wait.  Have you tried any new recipes lately?  I would love to hear about it!

Here’s what we ate last week:

Monday   Potato soup, Biscuits, and Bacon

Tuesday  Leftovers, and Broccoli salad

Wednesday  Cheese and tomato tartlet, with roasted potatoes and onions.  Want the recipe?  This was DELICIOUS and we will be having this more often.  There was not one crumb left.  From anyone, which is a first for a new recipe for me.  YUM.

Thursday   Giant salad and Red Baron Pizza.

Friday   Chinese!!

Saturday  Leftovers, yay!


Sunday  New York Strips with baked potatoes, roasted sweet peppers, onions and asparagus.  I always buy my meats when I’m shopping for the week on the clearance rack – markdown section, whatever it’s called.  I come straight home and stick them into my giant cold friend in the garage.  This way, I can have steak when I want it, but I don’t have to pay $19.99 a pound for it which is what these were originally.  I paid $5.98 a pound for these and they were delicious.

What’s for Supper? Weekly Meal Plan 03.25.19

Hello again!  This will be a two-week version, because I forgot to post last week.  Surprise.

So, how did your week go?  As always, I am obsessed with the weather.  Our temps are swinging crazily between the 20’s in the mornings and the mid 70’s sometimes during the days.  You know, Spring.  Woohoo, may it last until September!

In other news, my precious spider is trying to bite the dust.  In a panic I stopped by my local Walmart with the intention of picking up a new one.  They only had ONE type with a strange handle that I did not like, so I left thinking that I need to go all the way to New York to get a new one.  Denton would definitely be on board for that, but it would make for a very expensive spider.  So I think I’ll just order an exact replacement for mine online.  Not nearly as fun, but more cost effective.

Do you have a must have kitchen item?  My spider is one of mine.  I use it every single week when I make salmon.  I honestly wouldn’t want to make it without it.

Now after that tangent, here’s what we ate for the last two weeks:

Monday – 11th  Hamburgers, chips and pickles

Tuesday – 12th  Leftovers, my favorite!

Wednesday – 13th – Soup beans, sauerkraut and weenies, mac and cheese, roasted veggies and salmon.

Thursday – 14th  Pork chops, mashed potatoes, biscuits and gravy.

Friday – 15th Papa John’s pizza.  Hayden and I went into the city and were exhausted by the time we got home.  Yay for takeout pizza.

Saturday – 16th  Leftovers.

Sunday – 17th Subway and Wendy’s

Monday – 18th  Pigs in the blanket, fried potatoes, roasted broccoli with garlic and lemon.

Tuesday – 19th  Fake lasagna, garlic bread, and a giant salad.

Wednesday – 20th   Manwich sandwiches, chips and pickles.  Do you ever have a craving?  This was mine.  It was so, so good!

Thursday –  21st.  Leftovers, Yay!!

Friday –  22nd.  KFC / Our favorite Italian restaurant.  One thing about eating out – or eating takeout food at our house – is that everyone can essentially pick what they want.  Liv and I went into the city for the day while she was out on break and we picked up everyone’s favorite on the way home.  Done and done.

Saturday –  23rd  Soup and sandwiches / leftovers.  Whatever floats your boat.

Sunday –  24th  Soup beans, fried mushrooms, Mac and cheese, salmon, roasted onions, potatoes and asparagus.  Yum.

Hello again!  How did your week go last week?  I have no idea how ours went, because I can’t even remember what happened on Saturday, much less the whole week!  I had to text Denton and ask him what we ate for supper Saturday night, because I didn’t write it on my giant wall calendar and apparently my brain is mush.  (He didn’t remember either!)  So, I texted Olivia at school and she knew right away.  It was breakfast.  😆

In the weather department, on Sunday it was 71* and I thought I would have heatstroke.  I dread summer.  I just hope and pray that Spring last’s more than 3 days.  I will be glad to get tomatoes into the ground though.  Is is still cold where you are?

Anywho….. here’s what we ate last week:

Monday – Soup beans, sauerkraut and weenies, mac and cheese, roasted veggies and salmon.

TuesdayTaco sandwiches/Nachos and Cornbread salad.

Taco sandwiches are exactly what you are thinking:  taco meat on two pieces of bread with some Hellmann’s spread on the bread!  Denton LOVES this.  He was very disappointed when I made taco’s last week and we used all of the taco meat, so TADA, he gets taco sandwiches for supper!  The kids prefer nachos, hahaha.  I was craving cornbread salad, so everyone was happy.

Wednesday – Leftovers, my favorite day!

Thursday – Hamburgers, chips and giardiniera ( I LOVE this stuff)

FridayChicken wings/Raw veggies and dip and Cauliflower “wings”

Saturday – Breakfast for supper:  Pancakes, hashbrowns, eggs, toast and bacon.  Yum.

What’s for Supper? Weekly Meal Plan 03.04.19

Hello again!  Another week has flown by.  Last week our temps hovered in the 60’s and tomorrow morning, it’s supposed to be 15* when Liv gets on the bus.  With the RealFeel it’s supposed to be 3*.  We’ll see if they delay school or not.

Is that a thing where you live? Delaying school for super cold temperatures?  Here, most of the kids dress like it’s Spring or Fall year round.  Even when they shouldn’t.

Anywho….. here’s what we ate last week in no particular order:

  • Subway and Wendy’s – Subway for me and Denton, Wendy’s for the kids.
  • ???  I keep a giant calendar on my wall in the kitchen for important dates we need to remember and this is where I keep track of supper.  I didn’t write it down for one of the nights and I have no idea what it was.  I would guess soup beans, but I know that I didn’t make that last week.  😥  Who knows?

I have big plans to make my salted, brown butter, chocolate chip cookies this week.  But, I had plans to make them last week too.  Here’s hoping!  If I do, I’ll post the recipe later this week.  They are phenomenal.

And since I forgot to take photos of most of the food this week, here is a lovely photo of Batman stuffing himself into his new favorite box.  Never mind that it’s slightly too small for him, he doesn’t mind.

He curls himself around in an oval shape and sleeps for hours like this.  Crazy boy.

What’s for Supper? Weekly Meal Plan 02.25.19

Hello again!  I hope you are safe, dry and warm where you are.  Our area has seen massive amounts of rain, wind and just general chaos over the past week.  All of that after we got around 4 to 5 inches of snow.  Liv was out of school again today.  I’m assuming it’s because of all the road closures due to mud slides and lot’s of people’s power being out.  She may get to graduate in May, we’ll see!   They are calling for more snow this coming weekend….

Here’s what we ate last week in no particular order:

  • Soup beans, roasted veggies, mac and cheese and my beloved salmon.

Salmon Bombs

  • Wendy’s – the families choice
  • Soup, a giant salad and sandwiches
  • Chinese!  My favorite.
  • Leftover day always makes me happy.  I don’t have to cook and we get to eat yummy food again!

We also had chocolate cake, sugar cookies that Liv made and other various goodies.
